Sea cucumber have been revered by Chinese cooks since acient times, particularly on special occassions classic banquet. It was listed as a medicinal agent in the Bencao Congxin (New Compilation of Material Medica) by Wu Yiluo in 1757 and popular known among the Chinese as "haishen" roughly meaning "ginseng of the sea".
According to traditional Chinese medical principles, sea cucumber nourishes the blood and vital essence (jing), tones kidney qi (treats disorder of the kidney system, including reproductive organs) and moistens dryness (especially the intestines). It is commonly used in China to constipation due to instestinal dryness and frequent urination.
Sea cucumber is also higher in protein (at 55%) than most other foods except egg whites (at 99%), it has10-16% mucopolysaccharides and is low in fat.
